Sant Mateu is a pasteurized goat’s milk cheese of an orange natural color due to the characteristic flora of its rind that clearly differentiates it from other types of cheeses. Cured for between one and two months, only local goat’s milk is used in the manufacture of this fresh cheese. It has an elastic, creamy consistency, with a smooth aroma suggesting flowers, hay and milk, very aromatic. In the palate, the flavor is clean and herbaceous and slightly acidic, turning to sweet.

Sant Mateu pairs well with fresh fruit jams and apple or pear compote. Ideal in salads, as part as sauces and filling for meat, on top of grilled vegetables and fresh fruit. Combines with Gewürztraminer and Sauvignon Blanc wines and aromatic barrel fermented crianza wines.

Located in Catalonia, our artisan dairy also elaborates other excellent cheeses such as Nevat, Nevat in logs, Montcabrer, Cantell and Ros.
