p.d.o. Spain counts with 23 different Denomination of Origin “D.O. cheese”, the highest category of cheese. D.O. cheeses from various regions, valleys, mountains and islands, made by residents for centuries using fresh milk from local breeds. Production processes, the breeds involved and the final cheeses are subject to strict, on-going quality controls defined by law. D.O. cheeses can be recognized by the numbered seal stating: Consejo Regulador Denominación de Origen (Denomination of Origin)
