Artisanal cheese made from organic pasteurized cow's milk in the Catalonian Pyreness mountains. The rind is washed several times with artisanal local Montseny beer, giving the cheese its characteristic flavor.
The yeast reacts after three months, providing the cheese a more pronounced flavor and a more buttery delicious texture.
This cheese comes from the same dairy as our award-winning Garrotxa, Cabra Blau and Buffalo cheeses.
